Yummy grain salad


 

This is so simple & tastes amazing

Best part is it usually makes enough for left over the next night or for lunches


Ingredients;


✔️300g tri colour quinoa (or I use microwave red & white quinoa... done in 90seconds = brilliant!)

✔️ 1 x red onion, finely chopped

✔️90 g currents

✔️1 x pomegranate (seeds of course!)

✔️ 100g feta, crumbled

✔️100g flaked almonds, toasted

✔️Small bunch each of continental parley, coriander & mint, chopped roughly

Dressing;

✔️3 lemons, juiced

✔️1/2 tsp sugar


Method;


1. Cook quinoa according to packet instructions. Let cool in salad bowl.

2. Stir through rest of ingredients & dressing. Easy peasy !!
