Vietnamese Chicken Noodle Salad


Start with chopping lots of colourful vege;

✔️ capsicum

✔️ cucumber

✔️ snow peas

✔️ carrot

✔️ cabbage

✔️ cos lettuce

✔️ spring onion

✔️ coriander


Add;

  • Rice vermicelli noodles (cooked to instructions, I usually soak for 5-10min in boiling water

  • Cooked chicken breast (1-2 fillets depending on how many serves)

  • Handful of crushed peanuts

Dressing;

  • 1/3 cup sweet chilli sauce

  • 2 tbs fish sauce

  • 1/4 cup lime juice

  • 3 tbs sesame oil

  • 1 garlic clove crushed


Whisk together dressing ingredients and combine with all salad ingredients.


Usually enough to make into some rice paper rolls for lunch the next day.
